OK I am very new to the raspberry pi and linux.
I am trying to get the Dstar Commander desktop of the raspberry pi on my iPhone for one purpose and that is to log onto the raspberry pi 3 wifi without carrying around a monitor, keyboard and mouse.
I want to be able to log onto different wifi servers no matter where I go.
If anyone can answer this it would be very help full. I am a mac person so I don't do command lines. I know I have to for a linux machine. Any very very detailed help would be appreciated.

Somewhere in the DOC's and notes it tells how to set up and start Xvnc. I use it on my iPhone for Raspberry and PC/Mac around the house.

Part 2 of your question, There is a WIFI app you can access with VNC. Make sure you have the SYSINFO set and a quick key of the radio will email/text you what the address of the pi is. Once everything is configured, that is.

Well, you're going to have to know the IP of the PI no matter what if you want to access the desktop via a VNC connection. I use pocket cloud as the app to connect to the PI's via an iPhone or iPad. You can setup multiple WiFi entries on a PI, but if you're heading into the unknown then you're going to have some issues. In my case, one of the WiFi entries on my portable PI is my iPhone (which can run as a hotspot), so I can at least get an IP onto the PI - from there I can scan/add whatever I need and then turn off the iPhone hotspot. It's cumbersome, but it works.
Another option is to get a screen onto your PI (they're getting fairly cheap these days) and from there you can add WiFi entries.

I use the Fing App to establish the IP address of the raspberry pi. I also set my the IP address in the DHCP table as static.
For the VNC connection on the iPad/iPhone I use VNC Viewer. Enter the IP address and the password raspberry and you should be good to go as they say.
