Is it possible to edit and or create the "Watchlist" text file from the Pi GUI?

Yes, but with care to add trailing blanks for a total of six characters on each line, and all caps. The program was written with the presumption that the file would be written by the program with all the needed error checking at write time, so if you feed it something you edited and got the formatting wrong, it could misbehave.

Where is the saved Watchlist file? I could not find it.

The watchlist file is /etc/watchlist
The file is not created until you add at least one entry to a watchlist and then save the list to file with the SW command.
